Matthews original intent upon entering into the wine business was to create a flagship Bordeaux blend. The Red Wine has always been a benchmark in Washington state and beyond, consistently using all five Bordeaux varietals. Matthews has been producing Cabernet Sauvignon driven wines with all of the power and elegance that made the Paulliac and St. Estephe regions famous, with the added intensity of Columbia Valley fruit.
This wine was fermented separately in small lots. The wine was allowed to go through secondary fermentation before a final blend was made and the resulting wine was aged for 22 months in 100% new French oak. Egg white fined and without any other filtration.
A ripe, brooding, rich wine with a nose of pure caramel from the new French Oak, perfectly integrated with the ripe blueberry and cassis. A wine dominated by an obviously superb Cabernet Sauvignon with a hint of vanilla extract. This is a thick, textured wine, with a long, lingering finish and satin ripe tannins. What a great Washington Cabernet should taste like!
This young, dense, saturated, complex and extremely tight wine is sappy and packed with myriad berries and red/blue fruits. It is wrapped in stiff, hard, thick, dark tannins that add tight layers of moist earth, black tea, roots and bitter chocolate. This baby needs time. - P.G. (12/15/2005)
